Mandarin and Orange Plumcake

There is always the season of mandarins and oranges when we wonder what we can make out of them.

I thought we would all need a different way to consume them! Guaranteed success at home with family and friends.

All you will need is to make the Mandarin and Orange Plumcake :

2 Mandarins
1 orange
160g sugar
3 eggs
80g of oil
200g of flour
1 shot of espresso (Dark Roast Biodegradable Capsules – Kawah Coffee (kawah-rwanda.com)
1 bag of baking powder
1 pinch of salt
1 teaspoon of vanilla

Peel the mandarins and remove the seeds too. put them in a food processor with the orange (its peel too). Once processed, add the sugar, eggs, the espresso shot and a pinch of salt and continue blending for about 2 minutes.

Combine the flour, yeast and vanilla and blend for a minute.

Pre heat your oven and butter your mold and pour the batter.

Bake at 180 degrees for 35-40 mins.
